🍑 Easy Roasted Apricots Recipe

Ingredients:

Fresh apricots (halved and pitted)

1–2 tsp sugar or maple syrup (optional, helps caramelize)

A drizzle of olive oil or melted vegan butter (optional)

Pinch of cinnamon or vanilla extract (optional)

Instructions:

1. Preheat oven to 400°F (200°C).

2. Halve and pit the apricots. Place them cut-side up on a baking dish or sheet.

3. Drizzle lightly with maple syrup or sprinkle with sugar. Add a tiny bit of oil or vegan butter if desired for richness.

4. Add flavor boosters like a dash of cinnamon, a drop of vanilla, or even a sprig of thyme or rosemary for something fancy.

5. Roast for 15–20 minutes, or until soft, bubbling, and slightly caramelized at the edges.

6. Serve warm over oatmeal, vegan yogurt, ice cream, pancakes, or toast!
